Grey Peas and Bacon
|
1 lb dried grey peas
|
1 large sliced onion
|

3 oz Pearl Barley
|
Salt and Pepper
|
|
1 lb bacon
|
|
All the recipes for grey peas and mushy peas you see
well this is the blackcountry way, put the peas and pearl in a big saucepan add
a teaspoon of bicarbonate and soak over night this makes them swell, the next
day cut the smocked streaky bacon into small pieces and fry till is crispy add
to the pan with the peas also add the sliced onion salt and pepper, you will
find it needs more water, bring to the boil, now simmer for as long as you like
but keep looking because the water wants be be topped up now and again, I say it
takes about 3 hours to cook, keep a check on the water keep it sloppy dish it up
with some crispy bread.
